I’ve been asked about this cake so much recently I thought the easiest thing to do was blog about it! It’s quick and simple to make and tastes great. Plus it’s healthy! Enjoy!
Healthy Banana, Coconut and Chocolate Cake
150g ground almonds
3 tablespoons of Organic honey
1 tablespoon Vanilla extract
1 tablespoon Organic cacao powder
½ teaspoon Baking soda
3 ripe bananas
Desiccated coconut (optional)
4 tablespoons of Coconut Oil
Step 1: Pre-heat the oven at 180 degrees. Separate the egg yolks and eggs whites into 2 separate bowls. Use a larger bowl for the egg yolks and a smaller one for the egg whites.
Step 2: With an electric whisk, whisk the egg yolks until light and fluffy.
Step 3: Add in 3 mashed bananas, the ground almonds, honey, baking soda, cacoa powder, coconut oil and vanilla extract. Mix thoroughly with the electric whisk. At this point, you can add in the desiccated coconut if you choose.
Step 4: Whisk the eggs whites in the separate bowl until light and fluffy. Fold this into the cake mix in the other bowl, being careful not to knock out the air in the egg whites.
Step 5: Pour the whole mixture into a cake tin lined with grease –proof paper. Make sure the cake mix is evenly spread out in the tin. Place in the oven.
Step 6: Leave in the oven at 180 degrees for 35 minutes. To check the cake is cooked, skewer the cake in the middle and look at the tip. If it has any cake residue on it, the cake needs a little while longer.
Step 7: Once cooked through, remove the cake from the oven, remove from the baking tray and leave to stand and cool down.
